Apple and Raisin Baked Oatmeal

Say goodbye to boring oatmeal with this apple and raisin baked oatmeal. It is delicious, nutritious and makes a big enough batch to have leftovers for the week.
Ingredients
  • 3 cups old-fashioned oats
  • 4½ cups almond milk (or milk of choice)
  • 3 apples, peeled, cored and diced
  • 1½ teaspoons cinnamon
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 cup raisins
  • ½ cup honey
  • ½ cup chopped almonds (optional)
  • ½ cup shredded coconut(optional)
Instructions
  1. Preheat oven to 350 degrees. Grease a 9*13 casserole dish
  2. In a large bowl, combine all your ingredients. Pour into the greased casserole dish
  3. Bake for an hour
Notes
-You can mix the ingredients the night before and refrigerate. Next morning, pour into greased casserole dish and bake. For leftovers, reheat in the microwave for a minute and add a little extra milk if needed.
