Say goodbye to boring oatmeal with this apple and raisin baked oatmeal. It is delicious, nutritious and makes a big enough batch to have leftovers for the week.
Ingredients
3 cups old-fashioned oats
4½ cups almond milk (or milk of choice)
3 apples, peeled, cored and diced
1½ teaspoons cinnamon
1 teaspoon baking powder
2 eggs
1 cup raisins
½ cup honey
½ cup chopped almonds (optional)
½ cup shredded coconut(optional)
Instructions
Preheat oven to 350 degrees. Grease a 9*13 casserole dish
In a large bowl, combine all your ingredients. Pour into the greased casserole dish
Bake for an hour
Notes
-You can mix the ingredients the night before and refrigerate. Next morning, pour into greased casserole dish and bake. For leftovers, reheat in the microwave for a minute and add a little extra milk if needed.
