Sundried Tomato Hummus

Sundried tomato hummus is a flavorful appetizer or spread that comes together in a snap, and is so versatile!
Ingredients
  • 1 whole head garlic
  • 2 cans garbanzo beans, drained
  • 3 Tablespoons tahini paste
  • ¼ cup lemon juice
  • ½ cup sundried tomatoes packed in oil
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ⅛ teaspoon smoked paprika
  • broth or water for thinning
Instructions
  1. Preheat oven to 400 degrees. Cut the top ⅓ off a head of garlic (do not peel), drizzle it with about a teaspoon of olive oil and rub. Wrap in foil and bake for 30 minutes until the garlic is soft and a little brown. Allow to cool enough to touch.
  2. Squeeze garlic out of the skin into a food processor bowl, or blender. Add all the other ingredients and blend until smooth. If it is too thick, add a little water or broth to get it to a smooth consistency.
  3. Drizzle with a olive oil when ready to serve. Great with fresh veggies such as carrots, celery, and snap peas, or with pita chips.
Notes
You can also substitute the roasted garlic for 2 fresh cloves of garlic.
