Friends, let’s talk potatoes. Piping hot, well seasoned and perfectly crispy, please. I’m all about some crispy potatoes. I know lots of peeps who pine for mashed potatoes, but I will pass on them all day long for crispy potatoes. I almost always cook my potatoes with skin on, because it is so much healthier. Bahahaha… just kidding. I just really hate peeling potatoes. My Mom was so OCD about how to perfectly peel potatoes that I can’t stand the task. Turns out they are healthier with the skin on anyway! I just scrub them clean with a vegetable scrubber, and we are good to go. Red potatoes are my favorite for roasted potatoes, but in a pinch, any kind should be just fine.
The best part about this recipe is that there is minimal prep required. Just mix the potatoes in the herb mixture, and bake. Be sure to turn them over every 15-20 minutes to keep them from burning. Now just toss a salad and grill some meat, and dinner is done.
- 3 pounds red potatoes, scrubbed and diced
- 3 Tablespoons olive oil
- 5 cloves garlic
- 2 Tablespoons Dijon mustard
- 2 teaspoons dried parsley
- 1 teaspoon dried basil
- 1 teaspoon salt
- ½ teaspoon black pepper
- Preheat oven to 400 degrees F. Spray a baking tray with cooking spray.
- Toss the potatoes with the seasonings and spread evenly in pan. Do not overcrowd
- Bake for an hour, turning every 15 or 20 minutes.

Have you found yourself in a situation where you have had the same dream or prayer item on your list for a long time? I know I have, on many occasions. Those moments when you are so desperate for an immediate answer, yet silence screams back. Times when I want to give up on hoping and praying for that situation, or that person, because it just seems completely hopeless. In those moments, a choice has to be made, and this verse has been one that I run to. When all I have is faith that God still hears me, and He is fighting my battles,even when I cannot see the outcome I am hoping for. This week… it is a prayer for a little girl in my daughter’s grade, who is fighting for her life due to a head injury from an car accident this weekend. A friend and I were talking about it last night, and this verse came up again. Despite a terrible prognosis regarding her situation, I stand with all those praying for her, and I trust that God will bring miraculous healing!
