Sooooo… I just really want to know. What is your default action when you are under pressure? Not too long ago, our best friends were celebrating their 10 year anniversary (Yay, Mr and Mrs. K),and I found myself in the unique position of being a mother of 4 kids for 48 hours. Some might read this and scoff, and I have to say…. more power to all the mothers of 4+ kids, but I will be honest, I struggle, dude. My default action is to get in the kitchen and cook, so I turned on some good music and got in the kitchen to hide make the kids a treat. That, my friends is the story behind the creation of this sorbet. I needed to stay calm, and they needed a treat so they could stay in the back yard forever a little longer.
We purchased an ice cream maker for the girls as a Christmas present, and summer is the perfect time to pull it off the shelf and put it to work. We wanted something good quality that will be around for a little while, and this cuisinart model had great reviews and wasn’t too expensive. It’s easy to use, and we are really enjoying using it.
Here are a few helpful tid bits about this recipe.If you do not have an ice cream maker, freeze the mixture for at least 6 hours. I would scrape and stir about 3 hours into the freezing to minimize chance of it being too icy. Ginger can be omitted or reduced, but I loved the hint of spice that it added to the sorbet, to balance out the sweetness. You could also use all mango, or all pineapple. Try this soon, and let me know how it goes. But really… can you go wrong with mango? Me thinks not.
- 4 cups mango, diced (3 mangoes)
- 2 cups pineapple, diced
- ¼ cup honey
- Juice of 2 limes
- 1 Tbsp grated ginger (optional)
- Put all the ingredients in a blender or food processor and puree.
- Pour the puree in the ice cream maker and follow instructions for your brand. (Mine churned for 30 minutes).
- For soft serve sorbet, it is ready to enjoy. For firmer sorbet, freeze for at least an hour.
- **** If you aren't using an ice cream maker, pour puree into freezer safe container and freeze for 6-8 hours. Scrape and stir halfway through.
WEEKLY REFLECTION:
This week has been hard. I have a close family member that is in the hospital and it has left us a little overwhelmed. Two things have become so clear this week. First, that the love from friends and family can get you through some really crazy times. I have had friends keep my kids so I can be freed up, and family calling and messaging from all over the world to remind me that we are not alone. Never underestimate a kind gesture that you offer. It could be the very lifeline that someone needs.
Second, and most important, is the reminder that God’s peace can be found even in the storm. It’s so hard to explain it, yet it is so real! My verse for this week is Psalms 55:22 Cast your cares on the Lord and He will sustain you; He will not let the righteous be moved.
